Simple Greek Avocado Sandwich
Ingredients
- 2 slices whole wheat bread (soft)
- 1/2 avocado
- 1 tbsp pesto (basil)
- red bell pepper (roasted, jarred is fine)
- cucumber (sliced into thin rounds)
- purple onion (thinly sliced)
- 6 pitted kalamata olives (thinly sliced)
- 1 handful spring mix
- balsamic reduction
- balsamic vinegar
